Aunt Annie's Chicken Chili

"My sister, Ann, hates to cook but has several delicious recipes in her repertoire that she makes again and again. This is one of those recipes. It is a little different from most chicken chilis as it includes black beans and beer and olives. Excellent comfort food! Enjoy."

  • Heat 3 T. oil in dutch oven and saute chicken until no longer pink.
  • Remove chicken and wipe pot dry.
  • Heat remaining oil and saute onion, garlic, pepper and cumin 5 minutes.
  • Stir in chili powder, oregano, tomatoes, tomato sauce and beer.
  • Add chicken, cover and simmer for 20 minutes.
  • Add beans, corn and olives.
  • Simmer 15 minutes longer.
  • Stir in cilantro.
  • Top with cheddar and sour cream.
  • Serve.

  1. We loved the warm, rich flavour of this chili! It wasn't very spicy so I upped the cumin a bit for our tastes. Very healthy and tasty!

  3. This was good but very different for us. I followed the recipe as written except I used a can of white corn. I used Budweiser and we thought the beer taste was a bit overpowering (not sure if it was my choice of beer or what but that is what hubby drinks so that is what I used :) )
     
  4. Great chili! I doubled the amount of olives and corn, added a third can of beans and a cup of chicken stock. I love the flavor the beer gave this chili. It's very different from others I've tried. Thanks for sharing this great recipe, MamaJ!
     
  5. This has a great kick to it. I didn't change a thing, I just increased the cilantro because I like it so much. My husband is wolfing it down as I write and he gives it a big thumbs up! Thanks Mama J for another great recipe, you haven't let me down yet.

It bothers me more with adults than with kids, but I love that my six year old will eat just about anything I put in front of him.
