Aunt Bessie's Pink Applesauce

- 6 lbs sweet apples, peeled, cored and coarsely chopped
- 1⁄4 cup brown sugar
- 1⁄8 cup white sugar
- 2 tablespoons lemon juice
- 1 1⁄2 cups water
- 1 tablespoon strawberry gelatin
- 1 pinch salt
- 2 pinches cinnamon
directions
- 1. Combine all the ingredients in a heavy pot. Over medium-high heat bring to a boil.
- 2.) Lower heat and cook, stirring ofter while breaking up the apples, until apples are very soft. If the applesauce is getting too thick then add a bit more water.
- 3.) Immediately pour into prepared canning jars. Cover and process 20 minutes OR if to be used within 3 days, chill in the refrigerator.
