Aunt Heide's Yam Casserole

"This has been a staple at every family thanksgiving that I can remember. My aunt started the tradition and we just won't let her stop! It's easy to make but we generally leave it for a once a year indulgence."

  • Preheat oven to 400°F.
  • Peel and mash the yams.
  • Mix in brown sugar, white sugar, egg, evaporated milk, vanilla, maple flavoring, salt, and butter.
  • Pour into greased baking dish (9" x 11" or 7" x 10" work best).
  • For the topping: mix together 3/4 cup brown sugar and 2 tbsp of flour.
  • Melt the 1 stick of butter, and pour onto the casserole.
  • Crumble the brown sugar and flour mixture over the top of the casserole.
  • Bake uncovered at 400 F for 30 - 45 minutes or until sides are brown and bubbly.
