Casserole
- 3 large yams, cooked
- 1⁄2 cup brown sugar
- 1⁄2 cup granulated sugar
- 1 beaten egg
- 6 ounces canned evaporated milk
- 1 teaspoon vanilla
- 1⁄2 teaspoon maple flavoring
- 1 dash salt
- 1⁄4 cup butter

Topping
- 3⁄4 cup brown sugar
- 2 tablespoons flour
- 1⁄2 cup butter
directions
- Preheat oven to 400°F.
- Peel and mash the yams.
- Mix in brown sugar, white sugar, egg, evaporated milk, vanilla, maple flavoring, salt, and butter.
- Pour into greased baking dish (9" x 11" or 7" x 10" work best).
- For the topping: mix together 3/4 cup brown sugar and 2 tbsp of flour.
- Melt the 1 stick of butter, and pour onto the casserole.
- Crumble the brown sugar and flour mixture over the top of the casserole.
- Bake uncovered at 400 F for 30 - 45 minutes or until sides are brown and bubbly.
