Aunt Leland's Tea Cakes

"This was my great aunt's recipe for tea cakes, which are kin to a sugar cookie, very light and full of wonderful flavor."

  • Cream the shortening with the sugar until fluffy.
  • Add in egg & vanilla beat on low until mixed.
  • In a seperate bowl mix flour, salt & baking soda together, then add into the creamed ingredients.
  • Roll dough into a log and wrap in plastic wrap. Chill well, overnight is probably best.
  • Once chilled, pre-heat oven to 350 deg., slice and bake until cookies get light brown on the edges.

I work as the Public Works Secretary where I live and have been there 6 years. In my spare time I love to try new recipes and new foods to my husbands despair, he likes simple home cooking and doesn't like to branch out much, so I always feel good when he likes something new I've cooked. I love to read, cook, play on the computer. I don't have a favorite cookbook, I gather recipes from the net, church cookbooks, magazines, and family & friends. I keep a 3 ring binder with clear sheet protectors with all my gathered recipes. I've had people ask for my recipes of things I've made and I learned to cook from my mother and we don't always measure everything, so it's hard to tell someone how to make something. lol If it sounds good to you add it in, if it looks right, it's ready...lol
