Aunt Rose's Sorghum Cake

- 1 cup sugar
- 1⁄2 cup butter, softened
- 1⁄2 cup sorghum molasses
- 2 1⁄4 cups all-purpose flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon cinnamon
- 1 cup water, boiling
directions
- Preheat oven to 325 degrees.
- Grease a 9" x 9" baking pan.
- Cream the sugar and butter together.
- Add sorghum and mix.
- Sift together flour, baking soda and cinnamon in another bowl.
- Stir dry ingredients into the creamed mixture.
- Stir the boiling water into the batter; it will foam up.
- Bake about 45 minutes or until it springs back after being pressed lightly.

Bought a jar of sorghum from a local farmer at our town's farmer's market. Surprisingly cheap for the jar. Found this recipe and tried it out last night. This turned out to be a very delicious cake with plenty of flavor and a little bit of spice. Mine needed to bake for a little over 50 minutes to get done in the center. I will make this again. Thanks for sharing!

I also had a jar of sorghum that I purchased in Gatlinburg to try, and when I got home I had no idea what to do with it! Thanks for this recipe - the cake is delicious and was a perfect way to try this new-to-us ingredient. We served it warm with a homemade caramel sauce and vanilla ice cream. Perfection!
