Ingredients Nutrition
- 1 tablespoon extra virgin olive oil
- 1 cup diced butternut squash
- 1⁄2 cup diced red onion
- 1⁄2 cup diced yellow bell pepper
- 1⁄4 cup toasted sunflower seeds
- 1⁄2 teaspoon kosher salt
- 1⁄4 teaspoon cracked black pepper
- 1 cup cooked wheat berries
- 1 cup cooked cracked bulger wheat
- 1 cup chopped green beans, blanched
- 3⁄4 cup sliced kalmata olive
- 1 granny smith apple, diced
- 1 tablespoon lemon juice
- 2 tablespoons white wine vinegar
Directions
- In a large saute pan over medium heat add the olive oil and butternut squash.
- Saute for 3 to 4 minutes stirring often.
- Mix in the onion, bell pepper and sunflower seeds.
- Saute for 3 to 4 minutes.
- Remove from heat.
- Season with salt and pepper.
- Add remaining ingredients to pan.**.
- Toss well.
- Serve warm or at room temperature.
- **After you dice your apple toss with lemon juice to prevent browning.
