Autumn Chowder

"I found this in the fall TOH magazine. It looks awesome. I havent tried yet but I will as soon as it starts getting cold outside.I will probably use more bacon than what the recipe calls for but its up to you."

  • In a saucepan,cook bacon over med heat until crisp;remove to paper towels and reserve.
  • Drain,reserving 1 teaspoon drippings.
  • In the drippings,saute onion until tender.
  • Add potato,carrot,water and bouillon.
  • Bring to a boil.
  • Reduce heat;cover and simmer for 15-20 min or until veggies are almost tender.
  • Stir in the milk,corn and pepper.
  • Cook 5 min longer.
  • Combine flour and cold water until smooth;gradually whisk into soup.
  • Bring to a boil;cook and stir for 1-2 min or until thickened.
  • Remove from heat;stir in cheese until melted.
  • Sprinkle with the bacon.
  • Enjoy!

  2. Homey and comforting chowder! We did double the recipe and used chicken broth for the water and bouillon then again the broth with the flour. Did use shredded sharp cheddar and topped with a sprinkle of cheese along with the bacon. Served with ham sandwiches on rye and we all enjoyed a terrific tasting lunch. Made and reviewed for the Pick A Chef Orphanage - Fall 2012.
     
  3. I couldn't stop eating this--it's so delicious. This is a nice quick recipe you can whip up on a cold weeknight when you can't figure out what to cook and nothing's in the cabinet. I found this recipe in Taste of Home Cooking Through the Seasons. Delicious! Thanks for posting this great recipe!
     
  4. Doubled the recipe and made as stated - had to cook a bit longer than the time stated for my veggies to get done. Very tasty fresh and as left-overs. I added a dash of cayenne to my bowl for some zing. Thanks tinkerbell79 - this is a keeper!

Tweaks

  1. This is one of our family favorites! I doubled the recipe and used 8 slices of bacon. A few other tweaks too: added the flour to the cheese and omitted the water, just added the floured cheese after taking off the heat and also added all bacon back into pot of chowder instead of using for garnish. Delicious !

Ok I guess its about time to fill this out.:) Im 26 yrs old,been married to the greatest guy ever for 5 yrs now,and we have a 3 yr old little girl. I was born with a medical condition called TAR syndrome. All it means is that I only have 1 bone in each lower arm.(the long bone) Which makes them shorter than average. I could get it fixed but I really dont see the point. Ive lived 26 yrs with them being this way. I really dont know if I could function with longer arms. :) If you have any questions..just ask. I love this site. Ive been telling everyone about it. Ive really been cooking more because of finding zaar. I love to read almost anything,scrapbook,making mosaics(just getting started) and photography. I really havent had a whole lot of time for any of these things but Im going to make a effort to slow down and start doing my stuff again. Im also am getting into 4 wheeling with my family.
