  1. Chop all vegetables to one inch cubes.
  2. chop garlic very fine.
  3. In large pot, add olive oil and garlic.
  4. Sauté garlic until fragrant.
  5. Add all vegetables, and saute until slightly soft.
  6. Add all chicken broth.
  7. Add paprika and cumin.
  8. Cover and bring to low boil.
  9. Lower heat and simmer for 45 minutes.
