Autumn Yam and Peanut Soup

- 1 teaspoon oil
- 1 cup onion, chopped
- 1 teaspoon ground cumin
- 1 lb yam, peeled and cut into chunks
- 1 large green apple, peeled and cut into chunks
- 1 (14 1/2 ounce) can chicken broth
- 1 (6 ounce) can apple juice
- 1⁄8 teaspoon cinnamon
- salt and pepper
- 1⁄2 cup creamy peanut butter
directions
- In large saucepan over medium heat, heat oil. Add onions and cumin. Cook until onion is translucent, stirring occasionally.
- Add yams, apple, broth, apple juice, cinnamon, and salt and pepper to taste. Cover and bring to a boil. Reduce heat and simmer for 20 minutes, or until apples are tender. Add peanut butter. Stir until melted.
- Ladle into blender in batches if nessesary and blender until smooth. Return to pan. Heat through.
- To serve, ladle into bowls. Garnish with sour cream, chopped peanuts, and apple slices, if desired.
