  • Cut the avocados in half (carefully, if you want to use the shells to serve the salad). Scoop out the insides and chop finely.
  • Combine all of the chopped vegetables with the olives, and season with lime juice, salt, pepper and tabasco to taste.
  • Add the avocado and stir carefully, trying not to mash the avocado.
  • Heap the salad into the avocado shells and serve. Garnish with cilantro if desired.

  1. This is just delicious! I leave out the olives and don't use Tabasco sauce- still wonderful flavor! It is tangy from the lime juice, but the mellow avocado balances it out.
     
  2. I've just been diagnosed with diabetes & this recipe fit perfectly into my new diet plan. It was easy to make & tasted wonderful. I will definitely be making it again.
     
  3. wonderful flavor, texture and color. i omitted the olives by accident, but will be sure to add them next time. very nice fresh salad.
     
  4. I just halved the avocado and filled it. So to scoop the avocado with the veggie mixture. I did make a serving for 1 and had plently of the veggies left over. Skipped the salt the olives had enough. Thanks for keeping the summer here a bit longer!
     
  5. I've been wanting to make this all week and I wasn't disapointed! Delicious! I toasted a sub roll, melted colby/jack cheese on top, slathered on some mayo and a little deli mustard, piled the avocado ahdi on top and I was in heaven! Thank you Aunt Cookie!

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
