  • In a small bowl combine dated & water & let set for half an hour, then drain the liquid.
  • Combine all ingredients in the bowl of a blender & process for 1 minute.

  1. Very good, I used frozen blueberries and strawberries for the berries. Put everything in the food processor but the dates didn't really get chopped finely - I'm wondering if you would put them in there by themselves for a bit they would chop better; I'll have to give that a try sometime. Or I guess you could chop them really fine before putting them in too. Even though the dates weren't mixed in completely, it was still really yummy and made a great treat!
     
  2. I see I should have read the other review! This totally didn't work in my blender. (Perhaps the recipe creator had a Vitamix or some other super-hi-powered blender?) But the flavor is good. When my little food processor gets out of the dishwasher, I'll try getting a better blend, though it is kind of good with date chunks in it. :) I used frozen blueberries.
     
  3. I have to be honest, upon starting to make this recipe I was having reservations that this was going to come together and even taste good. I didn't use berries as you had stated in your ingredients and that was part of my leeriness. I used two dark plums I had sitting on my counter begging to be used. So, upon struggling with this mixture in the blender, I dumped it into a bowl and used my hand-held emersion blender. It still didn't mix together entirely (I really felt it needed some type of liquid) and so I thought what the hey...leave some chunks. I then refrigerated the mix for a few hours and joila...a great tasting chunky type pudding. I can see where the berries would give this some-what of a different taste, but the dark plums are a lovely addition. Made as a recipe-nap for Veg-n-Swap.
