Avocado "bacon" Sandwich!

"A yummy fresh sandwich that is easy to whip up and double if needed. Sprinkling the avocado with salt makes the sandwich mouth watering. If making just for yourself or if you have left over avocados, leave them in their skin, sprinkle the flesh with lemon juice, wrap tight in tin foil, and place them in the fridge. This will prevent them from browning and you can enjoy the avocados the next day."

  • Cook bacon in oven and slice avocado and tomato.
  • Split the avocado between two pieces of toast and sprinkle with salt to taste (don't skip!).
  • Layer rest of ingredients and enjoy.

  2. DH and I really enjoyed this sandwich for lunch today. I used Lightlife Smoky Tempeh Strips (aka Fakin Bacon), which worked really well and deli-sliced mozzarella on multi-grain bread. Yum. Served with a mediterranean bean salad. I'll be making this one again! Thanks!

  4. An emphatic 5 Stars from me! I saw this recipe among some Spring PAC 2013 details, just happened to have some lovely avocado on-hand & could not wait to make it. I used an artisan type bakery bread, real bacon cooked crisp & thinly sliced Gouda cheese. This combo of ingredients is excellent & the avocado keeps the sammie moist & flavorful without the use of mayo (a big plus in my book). Thx for sharing this recipe w/us.
