Avocado "mayonnaise" (Candida Friendly)

“Modified recipe from the Whole Life Nutrition Kitchen http://www.nourishingmeals.com. The original recipe called for 1-2 small avocados, 1-3 tbsp of fresh lemon juice and extra virgin olive oil, 1-2 tbsp water and a pinch of sea salt. Once you have blended avocado, add other ingredients in small increments and mix to taste.”

Directions

  1. Place all ingredients into a bowl or large mug and blend with an immersion blender (hand held blender). You can also use a blender or food processor, but given the small quantity of mayo you will be making it is much easier and more efficient to use a hand blender (makes clean-up easier too).
  2. Enjoy! You can use this as you would use regular mayonnaise - try it on sandwiches, in salads etc.
