Award Winning White Chicken Chili

"If you like a thick white chili with a bit of "afterburn", then try this. I started out with a few other recipes, and have tweaked this to our family's taste. I submitted this recipe for a chili cookoff at work and came in 3rd place! (the other 2 winners were traditional red chili with beef)."

  • In a stock pot, add diced onion and olive oil. Saute until clear.
  • Add seasoning packet and all other "dry" ingredients.
  • Continue to saute dry ingredients for a few minutes, stirring often.
  • Whisk in the water and lime juice (if using)and heat to boiling.
  • Add Chicken, beans, rotel, diced chili's, cheese dip, 1/2 and 1/2 and the sour cream.
  • Stir thoroughly and reduce heat to a simmer.
  • Let simmer for ~30 minutes and enjoy
  • It's even better the next day.

  1. This recipe took 2nd place in the chili cook off for work. I was 1 vote away from first. Everyone loved it and wanted the recipe! I used rottiserie chicken in it. Also substituted the 2 cups of water for chiken broth. So i didn't need to add the bouillon powder. I used a few drops of hot sauce instead of the cayenne pepper. It was a very tasty chili! Thank you for sharing.

  1. This recipe is amazing but makes very little for our family of 5. I quadruple the recipe so I don’t waste the queso. Also I add half the water, so the water called for , x2
     
  2. Ann other company Chili Cook-off winner to the award list for this recipe!<br/><br/>I chose to use chicken stock instead of bullion, and my cheese dip had mild jalapenos in it. I also threw in a can of creamed corn. It came down to a tie for first place, but the other gentleman ate mine and declared me the winner!<br/><br/>This recipe is so good some other competitors threatened to use it themselves next time, and many folks asked for this link. Awesome job!

I am married (almost 10yrs!!) with 2 great daughters (8yr and 6yr old). I love trying new recipes. We live in Monrovia which is just outside of Huntsville AL. I love my community. We are active in softball, basketball, horseback riding and gymnastics. I love to try new recipes and look forward to spending my weekends cooking. I also like to try quick week night meals since I work full time and the girls have their extracurricular activities.
