“SUMMER CHICKEN SALAD -- Serves 4 -- Cooking time 15- 20 mins A friend made this for lunch and it was so flavoursome I just had to have it. For Variatoin: can replace chicken with cooked prawns and the mango with peeled ripe peaches. If watching kilojoules, replace mayo with Greek style yoghurt and leave out the nuts.”

  1. Place chicken into large frying pan in a single payer.
  2. Pour pineapple juice over chicken. Set pineapple pieces aside.
  3. Add thyme to chicken.
  4. Bring to the boil over medium heat. Reduce heat to low. Cover and summer for 10-15 minutes. Remove from heat.
  5. Set chicken aside to cool in poaching liquid. Once cool, remove chicken, reserving 1/4 cup popaching liquid. Slice chihcken diagonally.
  6. Heat oil in pan over medium heat.
  7. Add onion. Cook for 3-4 mins until tender.
  8. Stir in curry powder and chutney.
  9. Remove from heat . Stir in mayonnaise and reserved poaching liquid.,.
  10. Tear lettuce leaves in half. place onto serving platter. top with sliced chicken, pineapple pieces, mango, avocado and nuts. Drizzle with dressing. Season with salt and pepper. Serve.
