  • Whisk together the olive oil and the lemon juice.
  • Toss the spinach in a large serving bowl with the olives and the combined olive oil and lemon juice.
  • Season the salad with sea salt and freshly ground black pepper.

  1. Good, simple of course but I liked this more than I thought I would. The dressing really complemented the baby spinach leaves. I used gourmet black olives with their seeds but think this would be better with sliced black olives (of course of good quality as well)
     
  2. Very simple and appreciated. I added tomatoes for extra color. The dressing was enjoyed but we all ended up adding a dash of balsamic vinegar for our personal tastes. Thanks for posting this, most spinach salad recipes require more effort. This was great b/c I had a lot of other things going on in the kitchen.
