- Rinse cod under running cold water.
- Place the cod in a large container filled with cold water, and soak for 24 hrs, changing water several times.
- Next day remove cod from water and pat dry with a towel.
- Meanwhile, peel and slice the onions and chop the garlic.
- In a frying pan heat up the olive oil and simmer the onions and garlic and also the bayleaf, salt, and pepper to your own taste.
- Now that your cod is dry, pass it through flour, and then the beaten eggs and fry it in a separate pan on both side till cooked.
- Turn on your stove to 375, place the cod on the bottom of a casserole dish and cover with the onion mixture, place in oven for about 10-12 minute no longer, or the cod will turn out to dry.
- While this is being done, peel and slice your potatoes in cubes and fry till golden (you can use more potatoes if wished).
- Remove your cod from the oven, and mix in you cooked potatoes, mix well and sprinkle with the parsley (when I don't have parsley I use fresh coriander.).
