- 3⁄4 cup firmly packed brown sugar
- 1⁄2 cup sugar
- 1 (8 ounce) container plain low-fat yogurt or (8 ounce) container low-fat vanilla yogurt
- 2 egg whites
- 2 tablespoons vegetable oil
- 1 jar prune baby food
- 2 tablespoons milk
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt (optional)
- 3 cups oats (I used 1/2 quick and 1/2 old fashioned)
- 1 cup dried cranberries or 1 cup raisins
directions
- Heat oven to 350*.
- Mix sugars, yogurt, egg whites, oil, milk, prunes and vanilla.
- Combine all other ingredients with these.
- Mix all ingredients together.
- Pour into 9 x 13 pan.
- Bake at 350* for 25 minutes.
- Cut into bars, store tightly covered.

These were more cake-like than I expected. Also, even though I put only the brown sugar, they were a little too sweet. However, they made a great breakfast, and were even better after freezing and defrosting overnight in the fridge. I subbed unsweetened applesauce for the prune baby food, put less oats (I didn't have enough) and added about half a cup each of walnuts, peanuts and almonds. Also, I used 1 egg instead of 2 egg whites. This recipe makes 9-12 breakfast-sized servings. I'll definitely be making this again, this is great for a healthy quick breakfast. Thanks for posting it!
