  • Heat oven to 350*.
  • Mix sugars, yogurt, egg whites, oil, milk, prunes and vanilla.
  • Combine all other ingredients with these.
  • Mix all ingredients together.
  • Pour into 9 x 13 pan.
  • Bake at 350* for 25 minutes.
  • Cut into bars, store tightly covered.

  1. These were more cake-like than I expected. Also, even though I put only the brown sugar, they were a little too sweet. However, they made a great breakfast, and were even better after freezing and defrosting overnight in the fridge. I subbed unsweetened applesauce for the prune baby food, put less oats (I didn't have enough) and added about half a cup each of walnuts, peanuts and almonds. Also, I used 1 egg instead of 2 egg whites. This recipe makes 9-12 breakfast-sized servings. I'll definitely be making this again, this is great for a healthy quick breakfast. Thanks for posting it!
