Bacon and Avocado Sandwiches

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning occasionally, until crisp, then transfer with tongs to paper towels to drain.
  • Stir together mayonnaise, chives, dill, and salt and pepper to taste in a small bowl.
  • Halve, pit, and peel avocado, then slice lengthwise. Gently toss slices with lemon juice.
  • Make sandwiches with toast, herb mayonnaise, avocado, bacon, and sprouts, seasoning with salt and pepper.

  1. I LOVE the combo of avocado & bacon!! This is my substitute for a BLT since I'm not a fan of tomatoes. I had this with some leftover soup for dinner last nite.
     
  2. Loved it! Made this for me for lunch today and it was so good! The chives were a great touch. I left out the sprouts as I didn't have any. Thanks for posting Kiwidutch! Please see my rating system as I rate tougher than most.
     
  3. I wanted to make this as part of an afternoon tea for 20, so I used ham rather than bacon and didn't toast the bread! But it worked great and the herbed mayo was really excellent after melding in the fridge overnight. Thanks for posting!

I made 1 serving which I shared with the DM for breakfast and I just loved the saltiness of the bacon with the creaminess of the very ripe avocado and the flavour of the herbed mayo (I used garlic chives) and still had plenty left to use later on grilled fish. Thank you Kiwidutch for another keeper. Made for 123 Hit Wonders 2008.
     
  5. My husband said this was a 5 star sandwich. I had to use clover sprouts couldn't find radish. I also added sliced tomato to ours. we also liked the flavored mayonnaise. We didn't use all the mayonnaise mixture. Thanks kiwidutch. Bullwinkle
