  • Chop onion and fry in olive oil until softened.
  • Add chopped garlic and bacon and cook for five minutes.
  • Add chopped courgette and mushrooms and fry for 3 minutes.
  • Add red wine vinegar and cook off till almost all liquid has disappeared.
  • Put chopped tomatoes and water into the pan and cook gently for approximately 10 minutes
  • Season to taste and add basil to taste.
  • Boil water and cook pasta for time stated on pack.
