Bacon Breakfast Pie

  • Preheat oven to 375 degrees F.
  • In a small bowl, mix the three cheeses together, set aside until needed.
  • Press the hash browns lightly into a greased 9 inch pie pan, to form a crust.
  • Sprinkle a 1/2 cup of cheese mixture over the potatoes, top with mushrooms, onion, bacon and broccoli.
  • In a large bowl beat the eggs, milk, thyme, salt and pepper together until well mixed and pour over vegetables.
  • Sprinkle the remaining cheese on top and bake in a 375 degree oven for 35 minutes or until the center is set and pie is golden.

  1. What a delicious breakfast we had today! We loved this breakfast pie and it was sooo easy to put together. I made only a few changes (only because I didn't have everything in stock) -- used refrigerated hash browns vs. frozen, I used asparagus tips and all cheddar cheese. The sky is the limit with the veggie and cheese ingredients in this dish. Sooo good. Made for the For Your Consideration tag game, August, 2014.
