Bacon Buttermilk Dressing for Spinach Salad

"This dressing is to die for! Serve on fresh baby spinach or add mushrooms and/or thinly sliced red onion rings. This makes 2 cups of dressing but is easily halved. Adapted from The New Basics Cookbook."

  • Saute the bacon until crisp and drain on paper towels. Set aside.
  • Mix together the remaining ingredients, then add the bacon.
  • Refrigerate at least an hour or up to 8 hours, stirring before serving.

  3. This is wonderful! So quick and easy. I made the bacon in the microwave and mixed the other ingredients while it was cooking. Total time--10 minutes, tops. I haven't tasted it on the salad yet (will be using with baby spinach) but I'm sure it will be just as fabulous. Thanks so much for posting!
     
  4. I haven't even let the flavors blend. But I licked some off my finger. OMG! It is wonderful! I am just doing lettuce, garden tomatoes, and cukes for the salad tonight. I know this will be asked for again! Time to throw out my bottled ranch dressing!
     
  5. Cookin-jo this dressing is excellant. The buttermilk & mayonnaise blend nicely with the garlic, seasonings and bacon. It is so much better than store bought dressing. We all enjoyed it so much. I served it on baby spinach with diced mushrooms and thinly sliced red onion rings as suggested. I also added coarsley chopped hard boiled egg, big shreds of parmesan cheese and crotons. I never really liked spinach before, but now I'm learning to really appreciate it. Thank you for sharing.

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown. I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy. I have 2 teenage sons and cooking to suit everyone's taste is always a challenge.
