Bacon Cheeseburger Tacos

"I made these up one night when I was confronted with a pound of ground beef and didn't want to make either burgers or tacos ... so why not combine the two? I used the white corn taco shells that come 12 in a 4.6 oz. box so they're kind of small; if you use larger shells the yield will be less; yield also depends on how much you fill 'em up! Also, a little of the tangy "taco sauce" I created goes a long way."

  • In a saucepan, cook the diced bacon until lightly crisp; pour off all but about a half tablespoon of bacon grease.
  • Add ground beef and green onions and cook together until beef is thoroughly cooked through, then stir in chili powder, salt, pepper and Liquid Smoke and cook together another 10 minutes.
  • Combine the"taco sauce" ingredients in a small bowl.
  • Assemble tacos: Fill taco shells with bacon-ground beef, then a drizzle of the taco sauce then shredded sharp cheddar cheese.
  • Heat in an oven or microwave until cheese is melted (has to be like a real cheeseburger, you know- LOL!), then add lettuce, tomato and onion.
  • Yum!

  1. Made for Taco Tuesday. Filling had a subtle but pleasant smoky flavor. Sauce was good. Something I would go to when I want "different".
     
  2. I was happy to see this when I was searching for ways to use ground beef. I however am elated to finally resolve the tacos vs hamburger debate my 4 children have on a regular basis. There was peace at the family table that night. (Thank you, Thank you!!)
     
  3. My kids really enjoyed these fun, easy tacos. I was out of green onions, so sub'd chopped white onion and added a couple of garlic cloves to the meat. The sauce was tangy. I still prefer regular tacos, but this is good when you want something different and definitely a kid-pleaser. Thanks for posting.
     
  4. I melted the cheese with the beef, but next time I'm going to sprinkle it on top like the directions said. Would make again.
     
  5. I made these for my husband tonight. He enjoyed them, but he tried hard shells & then soft ones-preferred the soft tortillas. I didn't use any liquid smoke & used onion powder for the onions. He added some pickles, too, and used reduced fat mexican cheese. I used lean ground turkey & turkey bacon to cut down on fat & calories. Thank you for sharing!
