Bacon Chicken

"Prep time depends on the thickness of your chicken breasts. My first preparation. gained a "very good" rating at home. I'm working on a sauce to add that will turn. this into a good sandwich, also."

  • Cook bacon in 12" skillet until crisp.
  • Crumble bacon and set aside.
  • Pour bacon grease out of skillet, but don't wash or wipe it.
  • Add butter and olive oil to the same skillet.
  • Cook chicken breasts in this mixture over medium heat, turning once, until chicken is done.
  • Place chicken in ungreased 12x8" baking dish.
  • Cook onion and garlic in drippings remaining in skillet until the onion is softened.
  • Stir in the pepper and cooked& crumbled bacon.
  • Spoon over chicken breasts and sprinkle with parsley and cheese.
  • Bake at 350 degrees for 10-15 minutes (watch closely) until cheese is melted.

  1. Very Tasty! I changed it a little. I used turkey bacon, sliced red onions, chopped instead of minced garlic (we love garlic!), didn't have parsley and used freshly grated romano instead of cheddar. I just browned the chicken and then finished it in the oven with the toppings. Leftovers were awesome! This recipe is now a regular in our house.
     
  2. We enjoyed this. I followed the recipe as written other then I forgot to add the olive oil to the pan when cooking the chicken. I added some garlic powder to the chicken instead of the garlic cloves. I also didn't bake this, I cooked the whole meal on the stove in one pan. I didn't add the optional parsley. We thought this was very flavorful and we enjoyed it.
     
  3. Yum! I took some ideas from other recipes & sprinkled the chicken w/ garlic powder & seasoning salt before baking. I served it on wheat buns w/ thousand island salad dressing which gave it a great kick. I also used slices of swiss cheese instead of cheddar. Tasted like a resturant chicken sandwich! Would also taste well without the bun. Thank you!
     
  4. My husband absolutely LOVES this recipe - he has raved to all his friends about it and asks often for me to make it. I think the cheddar cheese does make a difference, I grate the cheese myself and follow the recipe as given and it is perfect. Light up your spuse's taste buds and cook this!
     
  5. Both my husband and I thought this was a nice change to fried chicken. I was glad to see that it is a low-carb recipe as well. I used grated cheddar and mozza cheese. Very tasty.
