Directions

  1. Pre-heat oven to 350 degrees.
  2. Mix thyme, rosemary, sugar and garlic together.
  3. Rub spices into pork.
  4. Wrap pork crosswise with bacon.
  5. Place in oven, cook 30 minutes.
  6. Brush pork with maple syrup and balsamic vinegar mixture.
  7. Continue to cook pork another 45-50 minutes, brushing with mixture every 15 minutes.
  8. Ler sit 15 minutes before carving.
