Badam Kheer (Almond Pudding)

  • Shred 1/4 almonds into thin strips (optional) and grind the rest into a smooth paste using some of the milk.
  • Bring the rest of the milk to a boil and simmer till 2/3 of the volume remains.
  • Add the almond paste, sugar, cardamom powder and saffron. Simmer on low heat for 2-3 minutes, stirring occasionally.
  • Transfer to serving dish and chill.
  • Garnish with some of the shredded almond strips and serve.
