directions

  • Preheat the oven to 400 degrees F.
  • Mix the meat with the spices, garlic, onion, lime, basil, hoisin and soy sauce until evenly distributed. Roll the meatballs into 1 inch diameter meatballs.
  • Place in multiple glass baking dishes making sure the meatballs do not touch. Cook until done all the way through (20 minutes).
  • While the meatballs are cooking, thinly slice the jalapeno and using a vegetable peeler, make thin ribbons of carrot.
  • In a small bowl, mix yogurt with sriracha sauce and lime juice.
  • Cut the baguette into approximately 6 inch pieces. The full baguette should be 4 pieces while the half baguette should be two pieces. Cut those pieces in half horizontally.
  • When meatballs are done, remove from oven and allow to cool for 5 minutes. Just before the 5 minutes are done, use 1/6 (approx. 1 tbsp) of yogurt sauce to spread on each baguette piece.
  • Place slices of carrot, jalapeno and some cilantro on inside bottom of baguette. Place 3 meatballs on top. Repeat for each sandwich.
  • Serve immediately.
