Baked Apples

"This is sweet, crunchy, hot and cinnamonie. Is that a word? Go ahead and use your favorite choice of nuts. You can replace the rum with apple juice if you don't want the booze. But remember the alcohol will burn off. Ice cream goes sooooo well with the hot soft apples."

ingredients

  • 6 granny smith apples, cored almost through the apple 1 inch wide hole, peeled optional (The apple does burst open so if you want you can poke a couple of holes in the skin to let the air e)
  • 118.29 ml pecans, chopped
  • 59.14 ml raisins, soaked in
  • dark rum, to cover
  • 2.46 ml cinnamon
  • 59.14-118.29 ml brown sugar
  • 44.37 ml butter

directions

  • Mix nuts, strained raisins reserving the rum, cinnamon, and sugar ingredients,stuff into apples.
  • Place into a shallow baking dish that's greased with butter.
  • Pour remaining rum on apples.
  • Dot each apple with 1/2 tablespoon butter.
  • Bake in a 350 degree oven for 45 minutes.
  • Till fork tender.
  • Serve hot with a side of vanilla ice cream. (A yummy Must).

  1. My family loved these delicious baked apples with just a hint of rum flavor to go with all those yummy spices. I covered them, and shouldn't have?, as they sorta foamed over the top of the apple when they got done; however, it didn't affect their great taste. Next time I will bake the apples UNCOVERED and toast the pecans and sprinkle them on top when serving apples, as cooking the pecans inside the apples made them a little "soggy". We had this as a side dish for Thanksgiving, they were a nice complement to the turkey and dressing.

  3. Mmmmmmmmmmmmmmmmmmm! We loved these. Mine were not soft enough but 15 more minutes in the oven will solve that problem. Besides that they were fantastic! The rum really makes these special. We decided they should be called Butter Rum Baked Apples. I did not use pecans since we didn't have any and aren't big fans of nuts in general. Paired with vanilla ice cream this was the perfect ending to a great fall meal! Thanks for sharing.
     
  4. Very tasty - I used dried cranberries soaked in the rum & I don't think the rum was "dark" but it still tasted good. I put my apples in the middle of a pie plate and surrounded it with extra filling from an apple pie that I had just baked (so they had extra cinnamon, white sugar, & also nutmeg on them).
     
  5. These are to die for!!! Seriously... they are super easy to make and are just the most amazing comfort food you could imagine! I really believe the rum added something special to the apples, and I followed this recipe exactly, besides the fact I scaled it down to 2 apples. It was so delicious with ice cream and the pecans and raisins were the best!

Tweaks

  1. Absolutely delicious! I subbed sultanas for the raisins (Ive just never liked raisins) and mixed a cup orange juice and cup of rum (because I know that that makes a yummy drink) and after soaking the sultanas in it, then poured it over the apples before they went into the oven. I also followed a couple of reviewers suggestions about sprinkling the nuts on at the time of serving. That enabled me to omit the nuts from the serve of he-who-complains- -bout-nuts-IF- he-knows-that- they-are-present! Meant more nuts for us! Otherwise I followed the recipe exactly. I served these with a generous dollop of creamy Greek yoghurt. Everyone loved them, and they were pleased to know that there were two left for next day when, halved and carefully reheated in the microwave, they were just as delicious. Thanks for sharing this scrumptious recipe!
     
  2. Wonderful recipe. I omitted the nuts as I didn't have any on hand...also used rum extract instead of real rum...another inventory problem...put about 1/2 tsp into the sugar cinnamon mixture and then put a few drops over each apple after stuffing them, before putting the butter on. I used jumbo golden raisins and they were great...just soaked up the rum flavor...delicious! Will make again soon...all my dinner guests enjoyed them immensely!
     
  3. WOW-delicious! Make sure to puncture the skin all around to reduce change of skins splitting. I used dried cranberries instead of raisins, and it was wonderful as well. Also, added the nuts on top as suggested. Serve warm with lots of whipped cream. Yummy!
     
  4. Yum Yum Rita! These were just fabulous! I also toasted my pecans and substituted figs for the raisins, as i didn't have any! just yummy!!
