  • 1 onion, diced
  • 13 cup sesame oil
  • 1 cup butternut squash, roasted and cubed
  • 1 cup bread, roasted and cubed (croutons)
  • 1 red pepper, diced
  • 12 cup cashew nuts, roughly chopped
  • 12 cup coconut, shredded
  • 14 cup cilantro, fresh
  • salt
  • pepper
  • 5 avocados, halved and peeled
  • 14 cup sunflower oil
  • 1 tablespoon sesame oil
  • 13 cup onion, diced
  • 1 teaspoon garlic, minced
  • 12 teaspoon chili, chopped without seeds
  • 12 teaspoon allspice
  • 14 teaspoon curry powder
  • 1 lb plum, pitted and roughly chopped
  • 14 cup soy sauce
  • 1 orange, zested and juiced
  • 2 lemons, zested and juiced
  • 14 cup honey

  • Plum Sauce:

  • Heat the oils.
  • Fry the onion, garlic, chile, allspice and curry.
  • Add plums, soy, zests and honey. Simmer 1 hour 15 minutes, until thickened and smooth.
  • Stir often to prevent it fro sticking on the bottom of the pot.
  • Bake Avocado:

  • Fry the onion in the sesame oil. Mix with all the other stuffing ingredients. Seson to taste. Place spoonfuls in the avocado cavity.
  • Bake at 400F for 5 minutes. Transfer to broiler until the top is light brown. Do not over cook as the avocados would become bitter. Serve with plum sauce.
