  • Heat oven to 250 degrees F Place a cast iron Dutch oven over medium heat& stir in the bacon, onion, and jalepenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes.
  • Stir in the tomato paste, dark brown sugar,& molasses.
  • Drain the beans& reserve the soaking liquid.
  • Add the drained beans to the Dutch oven.
  • Place the soaking liquid in a measuring cup & add enough vegetable broth to equal 4 cups of liquid.
  • Add the liquid to the Dutch oven& bring to a boil over high heat.
  • Add in cayenne, black pepper& salt.
  • Give them a stir and cover with the lid.
  • Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

  2. Excellent and easy (we cook in a crockpot. I think next time we may substitute ham hocks or a turkey drumstick for a smokey flavor, but very good as-is. We'll never buy canned baked beans again.
     
  3. khah, these are great baked beans. I didn't have tomato paste so I used ketchup instead, plus I ran out of molasses so I used maple syrup for the remainder. I love the very tiny hint of a bite from the cayenne pepper, especially since I had to omit the jalapenos for the benefit of my son. I also really enjoy the smoky taste of the bacon (I used 1/2 lb canadian bacon for a leaner option.)The only thing I'd do differently next time is add only 1 tsp salt as mine came out pretty salty as is. Baked for 8 hours in the oven, with the lid off for the last 2 hours to caramelize and cook the sauce down. Very tasty beans that'll go well with our ribs and potato salad tomorrow. Thanks!
     
  4. I was already in the process of making beans when I saw this recipe. I mainly wanted to try the sauce part (paste, molasses, and dark brown sugar). I used large can of B&M baked beans, two 15 oz. cans pinto beans (drained), added almost 3/4 barbecue sauce, and one grated Granny apple. I did not add the bacon or jalapeno. I simmered these over low heat (covered) for about a half an hour. I have to say these were the best beans I've ever tasted. The sauce combo was dynamite. Please excuse all my changes!
