Baked Blueberry Oatmeal

ingredients
- 4 tablespoons butter, melted
- 1⁄2 cup brown sugar (or Splenda)
- 2 eggs
- 1 cup applesauce
- 1 1⁄2 cups milk
- 3 cups quick oats or 3 cups regular oats
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup blueberries
- brown sugar (or Splenda)
- milk
directions
- Mix butter, brown sugar, eggs, applesauce and milk.
- In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add blueberries. May add more cinnamon to taste.
- Pour into greased 9 x 9 inch baking dish. May be placed in refrigerator overnight. (If so, allow 5 to 8 minutes additional baking.).
- Bake in a 350 degree oven for 35 minutes.
- Cut into squares. Top with brown sugar and milk when served.

I LOVE it! Simple and nutritious, not too sweet. It is good as a snack as well as for breakfast. I like cutting it in bars and stashing in the fridge. Perfect to pop in the micro to heat and go in the morning. I'm experimenting with different flavors--tried adding peaches and almonds with a dash of almond flavoring instead of blueberries--yum!

My family and I love this! It's my new go-to recipe for easy weekend breakfasts and snacks. I'm tripling today's batch to freeze portions for rushed school mornings. Variations: I decreased the sugar and added maple syrup and pecans to the blueberries. SOOOOO yummy! I've also tried this recipe with apples and walnuts instead of blueberries and pecans. It was just as good. I can't wait to try fresh strawberries, blackberries, and peaches this summer.
