  • Preheat the oven to 400*F.
  • Mix chicken, picante sauce, cumin, cheese, onions, and jalapenos (If using) and stir well.
  • Evenly distribute the mixture between the 8 tortillas, placing the filling in the middle of each tortilla.
  • Fold opposite sides over filling.
  • Roll up from bottom and place seam side down and place on a wire rack positioned on a baking sheet.
  • Spread a bit of butter on top of each chimichanga.
  • Bake for 25 minutes.
  • Garnish with things such as shredded cheddar, picante sauce, salsa, or whatever you like if you want to.

  1. Very tasty, will probably make again. We used mild salsa - I will use a spicier one next time, and chop it fine in the food processor. It made about 12, but we used 8 inch tortillas. Also and it may just be my oven), at 400 degrees, the tortillas were on the buring edge of toasted by the time the cheese had melted. I will try my oven at 325 or 350 next time. Thanks for sharing!
