Baked Denver Sandwiches

"These are good for lunch or brunch, They can be baked right away or you can refrigerate them to bake the next day. Recipe can be doubled or halved."

  • Arrange 4 slices of the bread, buttered-side down, in an 8" or 9" square pan. Sprinkle with cheese, ham, bell pepper, and green onion. Top with remaining slices of bread, buttered-side up.
  • Beat eggs with remaining ingredients and pour mixture over the sandwiches, Cover and chill in the fridge for up to 8 hours or bake at once at 375 degrees for 35-45 minutes.

  1. Tasty breakfast sandwich. Had to cook a little over an hour to get firmed up. May experiment with more egg, less milk to see how that works.
     
  2. Fantastic Sandwiches! I made these for my husband and his friends. THEY LOVED THEM. It was the perfect early 11am lunch. With some fresh fruit, and a nice cold glass of milk - he was in heaven. He said he would rather eat my cooking anytime instead of having lunch at local Denver Restaurants. I'll take that as best as I can, and keep making these for him!
     
  3. I had made these for lunch and cut the recipe in half since we were only two of us. I prepared everything in the morning and brought it to work to pop in the oven. I had used diced ham with the red peppers and a bit of extra green onions with a few dashes of hot sauce. I took mine out at about 40 minutes because they looked cooked, but mine wasn't quite ready, the other one was but not mine. So it definitely needed 45 and a bit more. Personally I think they should be cooked right away once the egg mixture is poured over them, I think the bread has too much time to get mushy if it just sits in the mixture and that could be why it didn't cook properly (JMO)...But the flavor was yummy on my friends. I am a preschool teacher in Florida, here since marrying my hubby in Sept of '04. I have a stepdaughter. No kiddos of our own unless you count those with fur :-) We have 2 cats and 2 dogs who think they are cats. We are inovoled with our church and with our local American Legion post, where I cook breakfast once a month for the community, so I am always looking for new and fun breakfast/brunch ideas.
