- 4 flounder fillets, 6 oz. each (or other whitefish variety)
- 1 tablespoon extra virgin olive oil
- 2 tablespoons white wine
- chopped fresh garlic (to taste)
- chopped parsley (to taste)
- fresh lemon juice (to taste)
- salt and pepper (to taste)
- lemon wedge (to garnish)
directions
- Preheat oven to 350 degrees F.
- Spray a baking dish with non-stick cooking spray.
- Arrange fish in dish and add oil, wine, garlic, parsley, lemon juice, and salt and pepper.
- Bake for 10-15 minutes, or until the fish flakes easily.
- Serve with fresh lemon wedges.

I was looking for a healthy fish recipe that was tasty without containing butter or cream, well I found it with this recipe, I used ling/shark & I added some dried Tarragon to the parsley, it was lovely & moist & the 1 large clove of garlic topped it off, I also squeezed extra lemon over at the end. My husband & I thoroughly enjoyed it, but I actually made too much & we couldn't finish it so I gave my fussy burmese cat some leftovers and he amazingly wolfed it down, this is a cat who won't even eat atlantic salmon or prawns, so I thank you that the 3 of us had a great meal.
