Baked Fish Nuggets

"I had five pieces of IQF tilapia defrosted tonight, but no inspiration on how to prepare them. I happened to look in the freezer and see a bag of tater tots. "Finger foods sounds good" I thought. So I tweaked a recipe from a Cooking Light cookbook into this recipe. My kids loved it. They ate them with ketchup while I prefered tartar sauce. We all also had tater tots and applesauce."

directions

  • Preheat the oven to 400 degrees. Put the fresh bread crumbs on a cookie sheet and place them in the oven until they are toasted (3-5 minutes). Take them out and set them aside to cool.
  • Turn the oven up to 425 degrees.
  • Cut the tilapia into slices about one inch thick. (I cut mine on the short side because my kids are small and like small nuggets.).
  • Put the tilapia in a bowl and add the milk. Stir well.
  • In a large ziploc type bag add the toasted bread crumbs, cornmeal, and pepper.
  • Using a slotted spoon, remove the fish from the milk and put the pieces into the bag. Seal it and then shake it up so all the pieces are coated.
  • Spray a cookie sheet with cooking spray.
  • Place the nuggets on the baking sheet. Sprinkle the tops with salt.
  • Bake until the fish flakes easily with a fork, 15-25 minutes.

  1. These were delicious & very easy to make. I'm officially a convert! I will be making my own fish nuggets in future, rather than buying frozen fish sticks or nuggets. I was able to use whole wheat bread for the breadcrumbs to make it a little healthier & loved the skim milk to keep it lower in fat! Did not add any salt/pepper but used some Cajun seasoning in the breadcrumbs/cornmeal mix instead. Gave it a great, but not terribly spicy flavor. Going to add these to the repertoire! Great recipe! =)

  2. These were simple and the texture was great - I was afraid the crumb coating wouldn't stick but it was just fine. I might add more to the coating, like some cayenne or some parmesan. Thanks for posting.

  3. Made for my grandkids lunch... I used 2% milk, since that's what was in the fridge. Added 1 tsp Old Bay Seasoning to the dry mixture. My tilapia was very thin, so I baked for 6 minutes, turned, and baked 6 minutes more. Flaky and tasty! We will make these again!

  4. Well, I thought these were just yummy! I used some breadcrumbs that had parsley and orange zest in them. I served with Cabbage Parsley Slaw and tartar sauce. Thank you!
