Baked from Scratch Pancakes

  • Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick cooking spray. In a bowl, mix the milk, butter, vanilla, and eggs. In another bowl, mix together the dry ingredients. Add the wet ingredients to the dry and mix well (a few lumps are okay). Pour mix into the pan and bake for 25-30 or until a toothpick comes out clean. Once removed from the oven, let sit for five minutes before cutting into squares. Add syrup, whipped topping and/or fruit as desired.
  • If freezing, let the pancakes cool before cutting into individual squares. Place in freezer bags. When ready to eat, remove from freezer and place on a microwave-safe plate. Heat for approximately 90 seconds. Enjoy!
