Baked Fusilli With Bacon

- 500 g fusilli, prepared according to instructions on pack
- 250 ml cream
- 250 g bacon, diced
- 125 g mushrooms, sliced
- 1 onion, sliced and diced
- 250 ml grated cheese, plus 125ml (any easy melting cheese)
- 410 g kernel corn
- 1 red bell pepper, sliced and diced
- garlic
- salt and pepper
directions
- Preheat your oven to 180C / 350°F.
- Prepare fusilli according to the instructions on the pack.
- While the fusilli is cooking, heat some butter in a pan, add the diced onion until translucent. Then add the garlic and diced bacon and cook until the bacon is crispy.
- Add the mushrooms and about halfway through, add the diced bell pepper. Season to taste and take off the heat.
- In an ovenproof dish, mix together the cooked fusilli, the bacon / onion mixture, the can of corn and 250ml cheese, making sure to mix the cheese through thoroughly, then add the cream and mix through.
- Sprinkle the extra cheese over the top and bake in the preheated oven until the cheese is bubbly and brown on top.
- Serve with garlic rolls or a salad.
