  1. This is a great dish. I did make a few alterations however. Instead of butter I use grape-seed oil (for health reasons). I pre-cook the veggies about half-way. Once the onions & peppers get soft, I fold the veggies on top of the fish. (The cooked veggies help bake the fish). I also substituted prosciutto for bacon. I fried up the prosciutto a bit...Fantastic! Next time I go ice-fishing I'm going to post a picture. This last time we just dug in, we had no time to think of pictures.

  2. While the fish was nicely flavored by the bacon and vegetables, I had to cook bacon and vegetables longer.

  3. Yummy! Even my mom, who doesn't really like fish, loved this. And it was so simple!

  4. Tasty. Next time I think i'll precook the bacon alittle so it will be crispy.

  5. Ok...I did this at the same time as the "baked walleye" recipe...this one deserves 6 stars! I was leary about the bacon and onions being "done" in time, but followed your directions to the letter!....turned out beautiful, (should've taken a pic) and what a delightful flavor! I will keep this recipe....ps, my DH was impressed....now THAT is something! TY!

I’m over the hill and heading down the back side at a rapid rate it seems, single, and retired now. My loves? Good friends, most of all. After that I guess it would be wildlife and photographing it. In fact, I love anything that deals with wild animals and the outdoors. Then comes playing with my dog and making a mess trying to cook in the kitchen or around the fire pit, grill or smoker while enjoying a good tumbler of whiskey (whisky).
