Directions

  1. Combine butter and almonds in a saucepan and saute almonds until golden-brown.
  2. Arrange orange roughy fillets in a single layer in a shallow baking pan.
  3. Sprinkle fish with lemon or lime juice.
  4. Spoon sauteed almond mixture over fish.
  5. Sprinkle with salt, pepper and parsley.
  6. Bake covered at 350 degrees for 10 minutes.
  7. Uncover and bake 8 to 10 more minutes, or until fish flakes easily with a fork.
  8. Serve with lemon or lime wedges.
