Baked Pancake

"I first tried this when I was in high school spending the night at a friend's house. I remember watching, through the oven door window, at the way it puffed up. Sometimes it puffs up HUGE ... sometimes it puffs up lopsided... sometimes it doesn't puff up much at all....why? Who knows! *LOL* This will taste VERY BLAND if you don't add the powdered sugar! I mean, look at the ingredients!! :) "

  • Melt the butter in an 8" or 9" pie pan.
  • While that's melting, mix together the flour, milk and 2 beaten eggs.
  • Batter will be lumpy.
  • Pour over the melted margarine.
  • DO NOT MIX.
  • Bake until sides rise and middle is cooked.
  • 425* oven.
  • 15-20 minutes.
  • Take out of the oven and immediately sprinkle or sift powdered sugar over the whole pancake.
  • (I use A LOT!) Cut into pieces and serve!

  1. As you said, typically a little bland, but I like to use a mix of lemon juice and powdered sugar to spruce it up. To determine how fluffy it is, is how much you mix/whip it. If you mix it very gently, you get a very flat pancake. If you whip it with a whisk, it'll inflate like a balloon. This is because the air that you're adding to the mix will expand when it's heated.
     
  2. I loved this. It was easy and delish. I added a brown sugar mixture to it. 1 cup packed brown sugar with 1 tsp vanilla extract and 2 tbsp water. Sprinkled on when the pancake came out of oven. Added strawberries or bananas or blueberries and oh yum. Thanks for this!
     
  3. This was very easy to make. Mine puffed up great and deflated in the middle when cooled (which I expected) The kids loved it, I did sprinkle with powdered sugar and served with fresh strawberries and maple syrup. As I said my kids and husband Loved it, I liked it, it was just a bit egg-y (sp) for me. I will make again, however, I may try it with just 1 egg. Thanks
     
  4. Okay, maybe I did something really wrong (I don't know how, but its possible). Anyway, I mixed the ingredients and melted the butter in the pan in the oven. (This may have been wrong. Pan too hot?) I poured the mixture in and set the timer for 15 minutes. I checked it with 4 minutes to go and saw a big 'souffle'. Okay, maybe that will go down once removed from heat. Noooo. And it didn't taste so good either. But I didn't add the powdered sugar, so that would definitely improve the taste. So, with respect to Marlene this recipe did not work for me. It would be great if someone else tried it and succeed. I can be really terrible in the kitchen. ***An update to my original review: My mother loved it WITHOUT the powdered sugar. So, different strokes for different folks. At least I know I made it the right way. smile
     
  5. yummy! VERY easy to make... almost impossible to screw up :) awesome how it puffs up. and it's all about the powdered sugar on top :)
