  • Heat oven to 375 degrees. Season chicken with salt and pepper. Spread 1/4 cup pesto in a 9x13 baking dish. Lay chicken breasts over pesto and spread with remaining pesto.
  • Cover baking dish with foil and bake chicken till cooked through, 20 to 25 minutes. Uncover and top with cheese. Bake till cheese is melted.

  1. Absolutely loved this recipe! It is simple enough for a weeknight dinner and delicious enough for company. I served it with some orzo tossed pesto sauce. I use the Kirkland pesto from Costco, my favorite!

  3. Very quick to make and something different for the weeknight menu challenge. I used Classico pesto so added no other salt. I baked in a foil lined pan for easier cleanup. If you're a fan of pesto this will meet your expectations. Thank you for sharing the recipe!
     
  4. Top marks for an easy recipe even one you can make ahead and then just pop into the oven. I used a genova pesto and was wishing I handn't added the salt to the chicken (I won't next time) but on the other hand the DM who is a salt fiend absolutely loved it. I baked initially for 25 minutes at 170C fan forced and then 5 minutes to melt the cheese (I used a pregrated pizza mix of mozzarella, parmesan cheddar). Would also like to trial it with a tomato pesto (almost a faux par chicken parmesan without the crumbs on the chicken). Thank you nemokitty, made for Make My Recipe Spring Edition.
