Baked Pesto Tomatoes
"Desperate to find yet another way to use all the tomatoes from 4 plants, I found this in The Big Book of Casseroles. I used prepared pesto, but if you make your own, it is that much better. Had SO many, I shared with the neighbors, and even the young ones liked it. I used about 20 plum tomatoes and increased the remaining ingredients to match."

ingredients
- 2 tomatoes, halved lengthwise and seeded
- salt & freshly ground black pepper
- 29.58 ml basil pesto
- 78.78 ml monterey jack cheese, grated
- 2 green onions, including green tops, sliced
- 29.58 ml fresh parsley, chopped
directions
- Drain tomatoes, cut side down on paper towels for 10 minutes.
- Place cut sides up in 8x8 baking dish, coated with cooking spray.
- Season with salt and pepper.
- In a small bowl, combine pesto, cheese, onions, and parsley.
- Spread each tomato half equally with mixture.
- Bake at 350 degrees, uncovered until tomatoes are warmed through and cheese is melted, 8-10 minutes.
- Do not overcook, as tomatoes will get mushy.
- Leftovers reheat nicely.

Wow, Wow and Wow is all I can say about this one.. You should have heard all the oh my this is so good and the Mum you have not made anything this great in ages.. I made extra tomatoes and filing as there was eight of us and we are a little piggy sometimes. Every single person that tried this thought it was outstanding and would have given more than five stars if it was allowed. I like another reviewer put the seeds and some of the pulp back in with the pesto.. I also used gruyere cheese as we are in Switzerland and you can not get monterey jack cheese here and we love gruyere.. Nurse Janey this was soooooo gooooooood and one that I will be making again many times as I have been requested by the family.. Totally gorgeous, really easy to prepare and absolutely fabulous on the flavour. A huge hit and a real winner as far as my family is concerned.. -

Leftovers? What leftovers? We inhaled all of this fantastic dish in no time. Made as written, except that we can't get monterey jack cheese in Australia, so I used a cheddar. Thanks so much for posting.

I placed some of the called for cheese in the bottom of the tomato and mixed the remainder with the stuffing mixture with good results. I must say...I envy your abundance of tomatoes and wish I resided in 365 days a year tomato bliss.

<p>This photo of DH and me was taken on our 50th anniversary, 12/27/08. Both DDs and 2 DGC celebrated with us. <br /><br />DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson ! They all live in PA. and are VERY busy people ! <br /><br />I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! <br /><br />We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! <br />We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! <br /><br />DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. <br /><br />I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
