Baked Pierogy Parmigiana

- 1 (16 ounce) package frozen pierogies
- 2 cups marinara sauce
- 2 large onions, thinly sliced
- 1 (8 ounce) package mushrooms, thinly sliced (optional)
- 1⁄4 cup grated parmesan cheese (optional)
- 3 tablespoons oil
- 1 garlic clove, minced
- salt and pepper
directions
- Place pierogies in boiling water until hot, 3-4 minutes; drain.
- Saute onions, mushroms and garlic in oil until soft.
- Add marinara sauce, salt and pepper to onion mixture.
- Heat to boiling and cook 5 minutes.
- In a 2 quart casserole, arrange pierogies and onion mixture.
- Cover and bake at 350 degrees for 30 minutes.
- Sprinkle with parmesan cheese, if desired.
