Baked Pineapple

"I must start by saying, I do NOT like pineapple. However, the first time I had this, I was hooked. I've taken it to several breakfast potlucks and it's always a hit. Great for holiday and church potlucks. I've given this recipe to so many people I've lost count."

  • Cream together butter and sugar.
  • Add milk and eggs to mixture.
  • Add pineapple.
  • Add bread cubes and mix thoroughly. Don't be too rough or bread will start falling apart.
  • Bake in 350°F oven for 45 minutes or until top is golden brown.

I'm a single mom of a soon to be 7 year old. I'm lucky that my son LOVES veggies - he'd rather have carrots than candy. I love to cook but don't get much of a chance to. So, when I do get to cook, I like experimenting. My friends often invite me over. They ask what I want to make - I give them a list of what I need and they buy all the ingredients and I do all the cooking. So, we all end up happy. Personally, I like good down home cooking. I remember watching my grandmothers cook and what I would give to have some of those recipes now.
