Baked Pork Chops with Vegetable Rice

  • In large skillet over medium-high heat, heat oil.
  • Brown chops on both sides; remove and set aside.
  • Add onion and garlic to skillet; cover and cook about 5 minutes, until softened.
  • Add rice, curry powder, cumin and oregano; stir to coat rice.
  • Add zucchini, tomatoes, peppers, salt, pepper, bay leaf and chicken stock.
  • Bring to boil; reduce heat, cover and simmer for 10 minutes.
  • Transfer mixture to 13 x 9 baking dish.
  • Nestle pork chops into rice; pour any juices from meat over top.
  • Cover and bake in 350 oven for 30 to 35 minutes or until rice is tender and liquid absorbed.
  • discard bay leaf.

  1. Looks delicious and tastes very good. I will up the curry next time and maybe add a little cayenne, it wasn't quite enough kick for the hubby and I, but the kids liked it alot.
     
  2. Thanks Darlene10. I had made my own chicken stock & was looking for something other than risotto to make (and I had pork chops on hand). This made a tasty dish, the only thing I would say though is that I personally think it needed a bit more flavour - 1t of curry powder isn't very much when taken against the amount of meat & rice. I put in a heaped tablespoon, which gave it a bit more depth of flavour. (I had put in 1t, and tasted it before putting it into the oven, that is when I added more). Thanks for the very easy recipe, it will be a fantastic alternative to casseroles when winter rolls around.
     
  3. Definitely looks appealing and it does taste great! If you love pork chops, rice and curry, you will love this one! A real winning combination. I have to admit to seconds on the rice. I didn't have fresh romas on hand, subbed with canned which worked well for me. Great recipe Darlene10.
