  • 3 medium potatoes, peeled
  • 2 tablespoons oil
  • salt & pepper, to taste

Directions

  1. Preheat oven to 450 F and grease 2 baking sheets.
  2. Cut the potatoes in 1/8-inch thick round slices.
  3. In a pot of boiling water cook the potato slices for 5 minutes. Drain well and combine with oil, salt, pepper and spices (garlic, oregano, basil, etc) in a large bowl.
  4. Place potato slices on prepared baking sheets in one layer. Bake for about 15 minutes until crisp and golden brown.
  5. Gently remove the chips and place on a cooling rack or parchment paper; let them cool for few minutes and they are ready to serve.
