Baked Potato Soup

  • Bake potatoes in microwave until tener.
  • Melt butter in medium saucepan. Slowly blend in flour with a wire whisk until thoroughly mixed.
  • Gradually add milk, salt, and pepper whisking constantly.
  • Let simmer, but stir often.
  • Shop bacon and saute until crisp, but no over done.
  • Cut potatoes in half, lengthwise, scoop out potato meat and set aside. Chop two of the skins and discard the remainder.
  • When milk mixture is very hot, whisk in potato meat. Add potato peels.
  • Whisk well and add French Onion Dip, onion, and bacon.
  • Heat thoroughly.
  • Add cheese a little at a time until it is all melted inches.

This year I will be celebrating five years of marriage with my wonderful husband. We have been blessed with a little girl, Adria, who turned one this past summer. I am lucky enough to be able to stay at home with her, so my dreams of being barefoot, pregnant, and in the kitchen have come true!! While Adria is the only one right now, we are hoping for a large family! We live in Springfield, MO but originally grew up in a little town of 200 in Illinois. Over the last few years, I have come to love cooking! Although, I'm by far no expert, I do try! My mother and grandmother have been pretty influential in that! In what little free time I have, I love to scrapbook, read, walk, and travel with my family! In fact, we are planning a trip to NYC very soon.
