Baked Rice Pudding With Cranberry and Banana

  • Heat oven to 180C/350F.
  • Mix the milk, cinnamon, honey and nutmeg.
  • Divide the rice between two ramekins. Pour over the milk mixture and bake for 30 minutes.
  • Coat the banana pieces with the brown sugar and place in the oven 5 mins from the end of cooking for the pudding.
  • Remove puddings CAREFULLY! and serve topped with the banana, nuts and cranberries.

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
