Baked Rice Pudding With Cranberry and Banana

Rice pudding
- 2 tablespoons pudding rice
- 200 ml milk
- 1 pinch cinnamon
- 1 teaspoon honey
- 1 pinch nutmeg

Topping
- 1 banana, quartered
- 1 teaspoon brown sugar
- 1 teaspoon chopped hazelnuts
- 1 teaspoon dried cranberries
directions
- Heat oven to 180C/350F.
- Mix the milk, cinnamon, honey and nutmeg.
- Divide the rice between two ramekins. Pour over the milk mixture and bake for 30 minutes.
- Coat the banana pieces with the brown sugar and place in the oven 5 mins from the end of cooking for the pudding.
- Remove puddings CAREFULLY! and serve topped with the banana, nuts and cranberries.
