  1. Cut "lids" from bread rolls.
  2. Remove bread from inside rolls, leave 1 cm shell.
  3. Combine cheeses, garlic, egg, tomatoes and olives in a bowl.
  4. Place eggplant slices in base of rolls.
  5. Top with basil leaves.
  6. and then top with ricotta mixture.
  7. Replace lids, wrap rolls in foil.
  8. Bake in very hot oven for 15 mins until heated through.
