Baked Salmon Fish Sticks

"Salmon is one of my favorite foods. It is high in Omega-3 oils. This recipe comes from "Cooking with the Diabetic Chef". Serve with your favorite sauce."

  • Spray a baking sheet with non-stick cooking spray and set aside.
  • In a shallow dish, combine the corn meal, black pepper and garlic powder.
  • Dip the salmon slices into the milk and then dredge in the corn meal mixture, coating completely.
  • Place the coated salmon on the prepared baking sheet, allow to rest 10 to 15 minutes.
  • While the salmon rests, preheat oven to 375 degree; place the salmon sticks in oven and bake for 25 to 30 minutes or until the sticks flake easily.

  1. The salmon needed to be salted first. I'll do that next time. Also, 15 minutes was plenty of cook time. Good with a homemade lemon dill aoli.
     
  2. I really liked the idea of this. Salmon is so good and my youngest like fish sticks! I made this as directed but only cooked them for about 12 minutes and they were done. I would cook them even less next time. Personally, I would add a bit more garlic powder and pepper. There is also enough coating for this recipe to coat twice as much fish! We enjoyed these with Recipe #304533 and Recipe #425369. Made for my teammate for ZWT6. Thanks PaulaG! :)
     
  3. This worked out really well for me. I made these for my children today and they really enjoyed them. I used a whole grain corn meal which was probably more coarse than the recipe intends, but it was fine. I already had the oven on at 425 for something else, so I just cooked the salmon sticks for 20 minutes and they were just right. I cut down the amount of pepper, but otherwise I think the seasoning was good - just needed a few pinches of salt. Made for ZWT6.
     
  4. These were easy to make and a nice different way of serving salmon. I agree that after 25 minutes that mine were a bit overcooked but that is easily fixed next time. I made a home made tartar sauce and they were great for dipping. Made for PAC Fall 2009.
     
  5. This recipe didn't turn out quite like we were hoping. Part of it was my fault. I used a coarse ground cornmeal which made the outside too crunchy. But also, it was a little peppery for our tastes. And we felt the salmon was overcooked when baked for 25 minutes. We'd like to try this again because it was easy to prepare and it has great potential. Thank you for posting! Reviewed for ZWT4.

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
